Ingredients:
3 Fresh bakery Ciabata mini loaves
1 pound loose mild sausage
1 cup chopped onions
1 cup sliced portabella mushrooms
3 cups fresh spinach
1/2 cup roasted peppers
1/3 cup asiago cheese
1/3 cup shredded provolone & mozzarella cheese
Salt pepper to taste
Directions:
Slice one end of the Ciabata breads and hollow out, leaving a shell and put aside.
In a frying pan heat olive oil, then add onions and cook half way.
Add loose sausage and cook thoroughly.
Add portabella mushrooms, roasted peppers and lastly the spinach.Mix well over medium heat adding salt and pepper to taste.
Remove from heat to a stainless or heat proof bowl.
Then add the asiago and mozzarella provolone cheeses.
Mix well.
Take your bread shells and stuff the mixture in them.
Bake for 20 minutes on a cookie sheet in a preheated oven of 375 degrees.
Slice and fan on a platter, garnish with fresh basil and parmesan cheese and serve with marinara sauce.
