Ingredients:

1 carton egg whites

Olive oil

1 cup each sauteed:

Asparagus

Roasted red peppers

Portabella mushrooms

Sliced red onion

Chicken breast strips

3 cups sauteed spinach

1/3 cup asiago cheese

2 cups low far shredded cheddar cheese

Directions:

Mix all of your ingredients together and place in a well olive-oiled glass casserole dish.

Pour in egg whites then mix in cheddar cheese and top with asiago.

Bake at 375 for 35 to 40 minutes or until toothpick test comes clean.

Serve with salsa, whole grain bagel and fresh strawberries.
