Ingredients:

4 - 1 1/2 pound cornish hens

2 - pounds loose sausage

1 - cup finely chopped celery

1 - cup finely chopped onions

1 - cup chopped dried apricots

3 - cups chopped cornbread

1/2 - cup sliced almonds

1/4 - cup grated orange peel

1/2 - tsp thyme

1/2 - tsp rosemary

salt and pepper to taste

 

Glaze:

1 cup orange juice

1/2 cup honey

1/4 cup olive oil

1 tblsp orange peel

mix together in bowl and set aside.

Directions:

In a skillet, sautee the sausage, onions, celery and almonds in butter with salt and pepper to taste. In a large bowl mix in the corn bread, rosemary, thyme and apricots mixing well with the sausage mixture.

Stuff loosely in each hen then place breast side up in a baking dish or roasting pan.

Spoon most of the glaze over the hens then bake uncovered for 45 minutes in a preheated 350 degree oven. Cover then bake for an additional 40 minutes basting with the remaining glaze often.

Serve with some pan fried green beans in butter and dried cranberries and you got some good lovin !
