Crushed Peppercorn Gorgonzola Filet with Roasted Balsamic Broccoli Rabe and Baked Potato
2 - 2 inch thick filet mignon
Olive oil
1/3 cup peppercorns crushed
1 cup gorgonzola cheese crumbled
8 ounce pkg fresh broccoli Rabe
Sliced portabello mushrooms
1/2 cup balsamic dressing
2 large baking potatoes with holes poked in them
Butter
Sour cream
Salt and pepper
Preheat oven to 425 degrees
Marinate Broccoli with Portabello mushrooms in the Balsamic dressing and place on cookie sheet.
Brush filets with olive oil.
Roll outside of filets in peppercorns.
Pan sear filets in hot sautee pan. (Two minutes each side.)
Transfer to cookie sheet along side marinated Broccoli.
Place Gorgonzola cheese atop filets and bake in oven for 15 minutes or according to temperature.
Place potatoes in microwave and cook for 8 minutes depending on size of potato. Top with butter and sour cream.
Serve your dinner on her favorite dishes but don't forget the Chocolate covered strawberries and roses boys !!!
