Low Cost Crock Pot Meal: “Chicken Tortellini Soup”


After shoveling all of the snow this weekend, I’m sure some of you are hungry, but don’t necessarily want to cook. This week’s Low Cost Crock Pot Meal of Chicken Tortellini Soup is the perfect solution. It’s so easy with only six ingredients, and it will leave you feeling full, but more importantly nice and warm.


2-3 fresh or frozen chicken breasts

1 16 oz. bag frozen cheese tortellini

1 bag fresh spinach

2 8 oz. cans of Italian-style diced tomatoes

3 cups chicken broth

8 oz. of cream cheese


1.  Place the chicken breasts into the crock pot and top with the tortellini, spinach, tomatoes, and chicken broth.

2. Cut the cream cheese into small squares and place it in the crock pot.

3. Put the lid on and cook for 4 hours on low.

4. When time is up, ladle into a bowl and enjoy.
