It’s fine dining with a Cajun flair, the Backwoods at the Belmont opened back in August and offers a variety of entrees, from burgers and steak to a medley of seafood. The owner, Shawn Linger, explained his desire to bring fine dining to Fairmont.

“The long-term goal would be to go back to making this a place where, where you can go and have a fine meal, and at the end of your meal, wander next door and listen to live entertainment, or if you wanted to play the lottery machines, or just have an extra drink or whatever.  That was the plan from the beginning.”

His goal is made easier with the help of Chef Michael bringing diverse meals to the table.

“We ended up bringing Michael in.  We also wanted to incorporate a lot, he’s an extremely well-known chef in the area, and we wanted to incorporate a lot of his traditional dishes.  When he had the backwoods grills in the past, he had signatures like jambalaya, dirty rice, he has the muffaletta sandwich…He’s very diverse.  He loves making the New Orleans-style dishes and stuff.  And people pull me aside all the time when I’m down here.  They’ll be like, ‘I’ve eaten the jambalaya in New Orleans, and I’ve never had it better than this right here.”

And if that wasn’t enough to make your mouth water, the pastry chef, Sarah, creates daily fresh desserts, as well.

“And the thing that’s been the big hit lately is our pastry chef, Sarah.  She makes all the desserts from scratch.  She crushes the graham cracker to make the crust for the cheesecake, and everything is just made from scratch.”
